Banana Muffins with Crystallized Ginger

I stopped at the health food store the other day and picked up some crystallized ginger to snack on...it ended up being really strong so much so that it wasn't very tasty plain, what do I do with things that need used up...I make muffins of-course.  I had a good number of bananas waiting to be baked and thought this would be the perfect marriage.  My other new favorite thing...reynolds foil cupcake liners.  They stay vibrant when baked and peel off the baked goods like a dream! If it wasn't spring before, it is now!
